Share a Spoon THURSDAY!
 
 
It's like a commercial jingle and nursery rhyme all mixed into one!
 
Patty cake, Patty cake, baker's man, bake me a cake as fast as you can.
Roll it, and pat it, and break me off a piece of that KitKat BAR.
 
Insight into the mind of a mad woman.  Sorry...THAT up there is just the way this little mind works.  It used to think brilliant thoughts, but now I am watching NickJR again, and between that and reading nursery rhymes, well...you get the idea.
 
It could be worse...I could've sang what I get stuck in my head every day now.
Oh why not...There's a party in my tummy...so yummy...so yummy.
 
so this week's theme...
 
Cakes and Bars is compliments of That One Mom from Only Parent Chronicles.  One of my besties!  Who will be here one week from today!!!  OH. YES. SHE. WILL!
 
I made Zucchini-Carrot Bars this week and they were YUM!  Very moist, and a great sweet way to get your veggies in!  Any excuse, I will make any excuse to work in sweets.  Oh yes....they have to be healthy right?  There are veggies in there.  That's my logic and I'm sticking my tongue out at you with it!

Zucchini-Carrot Bars
 
 
Ingredients:

1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon kosher salt
1 teaspoon cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1 1/2 cups grated zucchini
1 cup grated carrots
2 eggs
1 teaspoon vanilla
1/2 cup canola oil (any vegetable oil will work)
1/4 c honey
3/4 packed light brown sugar
1 cup raisins
1 cup chopped walnuts

Preheat oven to 350 degrees.  Spray a 13x9 pan with cooking spray and set aside.

In a bowl combine the flour, baking soda, salt, cinnamon, nutmeg and ginger. Stir until all the spices are well distributed and set to the side.  In a small bowl put the cup of walnuts and spoon in a heaping tablespoon of the flour spice mixture.  Stir the flour over the walnuts and set aside.
 

 
 
In a large mixing bowl mix the grated carrots and zucchini together.  Add in the brown sugar, oil and honey.  Lightly beat to eggs and stir them in.  Add the teaspoon of vanilla and stir in the raisins.  Next add the flour spice mixture and stir until just combined.  Fold in the nuts.




 
 
Spread the batter into the prepared 13X9X2 pan and bake for 25-28 minutes.  A toothpick should come out clean.  
 
 
 
Cool completely.
 
 

Cream Cheese Frosting:

1 package softened cream cheese
2 tablespoons room temperature butter
1 teaspoon vanilla
1 1/2 cups powdered sugar

Beat cream cheese and butter together.  Add the vanilla and sugar and beat until smooth.
 

 
Spread the icing on the cooled cake and cut into bars.

Mmmm! Yum! I'd leave out the raisins though. =)

Make the Smore bars! They are delicious! Just eat one, then pass the rest to someone who's butt you want to see get bigger.... LOL

I just happen to have a couple Zucchini sitting on my counter so I guess I am making bars today!

It's going to be rainy and crappy, might as well bake.

These are like, healthy and stuff. What's up with that? haha, just kidding - they sound really good! My dad loves carrot cake, I might make him some of these instead. And you could always sub the raisins for chocolate chips. You know, if you wanted to make if mo'fatta :)

These sound like my zucchini bread and your carrot cake hooked up and reproduced some offspring! LOL! They sound fabulous! Save me one!

One thing I've learned over the years is if it has cream cheese frosting on it, I WILL eat it in large quantities.

I've never had anything with zucchini before. If you had to describe its flavor, what would it be? It sure looks good!
