It's Share a Spoon....CASSEROLES!
 



Today's theme comes to us compliments of my buddy Cheesecake, also known as Tamara over at Mad Boastings of a Cheapskate Mom.  This is her SaS week and she went and took a bloggy Unvacation.  (basically, she prescheduled all her posts this week so she would stay off the 'puter and do stuff with the kiddos.  She is a rock star mom like that.)  However, when I gave her a guilt trip told her it was her theme, she graciously offered up a recipe for the LIB site where she is a contributor.  She also gave us a SUPER FABBY makeover cause she had mad skills.

So...confession.  I am a complete slacker unprepared this week.  I had every intention of going to the store for the ingredients for this week's recipe and taking pictures for you.  Instead, I ordered Chinese food and fell asleep early after staying up two nights in a row.  Monday night I just couldn't sleep (insomniac remember?).  Tuesday night, Momma was drooling at the site of the wolf at Kamden's Twilight Eclipse Premiere party!  Oh my!  *swoon*

I have however put together an ingredient collage to help you get over my slacker ways get the idea.

Here's what you'll need:
1.5 pounds ground beef
One large onion diced
salt and pepper
One package taco seasoning

One can of diced green chiles
One small can (8 oz) tomato sauce
One jar of salsa (medium)
Two cans of Hormel Chili w/beans
10 Large Flour tortillas
1 cup shredded sharp cheddar cheese

Preheat oven to 350 degrees.  Spray a large casserole dish with cooking spray.

In a large skillet or frying pan, brown the ground beef, season with salt and pepper.  Add the diced onions, diced green chiles, and taco seasoning.  Cook until onions are softened.  Stir in the cans of chili.  Remove from heat.

In a bowl combine the tomato sauce and salsa.  (You can substitute the salsa with Rotelle if you prefer here.)

Take the flour tortillas and fill middle with meat/chili mixure.  Roll and add to prepared casserole dish.  Once all tortillas are in the casserole dish, pour salsa/tomato sauce over them and top with shredded cheese.  Bake for 30 minutes.

We serve this topped with a bit of sour cream.

(Cook's note:  If you don't like heat, leave the chiles out and substitute mild salsa for the for the medium.  If you like more heat, add a jalapeno to the meat/chili mixture.)

This is a crowd pleaser, and I am pretty sure that BDC fell in love with me because I made him this casserole the first time I took him dinner.  I hope you enjoy it as much as we do!

I was actually planning to post a "recipe" today, but it's not meshing with your Share a Spoon theme... Ever do Crockpot/Slow Cooker recipes? Mmmmn. ;)

Ohh, this one sounds damn good. Too bad my kid doesn't like onions or chiles or anything like that. Without it, it just wouldn't be the same.

What would I like to see? Hmm. How about your favorite Italian pasta dish?
