Everyone say...Thank You Ducky for the SALAD THEME!
This week's theme is brought to you courtesy of our notorious webbed footed friend Duckalicious aka Daffy over at Batcrap Crazy.
I had several ideas for today's post. I considered many salad recipes. However, I got lots of email requests hoping for pasta salads. Therefore....ask and Think Tank Momma shall deliver.
I did not have time to make and take photos. I know, I suck. Here is a collage of what you'll need. TRUST ME. This salad is PERFECT in every single way.
Ingredients:
1 bag of Wacky Mac Veggie Pasta (prepared)
1 chopped large tomato
1 English (Hot House or Seedless) Cucumber diced
1 Red Bell Pepper diced
1 can black olives drained and sliced
5-6 sticks mozzarella sticks sliced in small rounds
1 cup diced pepperoni
5-6 pepperoncini peppers sliced into rounds (tops and seeds removed)
1 bottle of Kraft Tuscan House Italian Dressing
1 can cannelini beans washed and drained
1 cup grated parmesan cheese
1 teaspoon red pepper flakes (optional)
Directions:
Boil the pasta according to the directions on the bag. Make sure to liberally salt the water to season the pasta. Rinse in cold water.
In a large bowl, add chopped tomato, peppers, cucumber, olives, beans, sliced pepperoni and mozzarella cheese. Toss in pasta. Season with salt and pepper. Add a pinch of red pepper flakes (optional). Stir in prepared and cooled veggie pasta. Add bottle of Tuscan Italian Dressing (or favorite Italian dressing) and 1 cup of grated parmesan. Incorporate all ingredients well. Refrigerate for an hour or so before serving.
This pasta salad is a HIT, always. You can use any tri-color past you like, but the Veggie Mac pasta is amazing and it really adds a special something. My boys have no idea that it's additional veggies added in and they love it!

I have never heard of Wacky Mac either! What am I missing out on. I will see if I can come up with a salad...I just spent 3 hours fixing my flippin' feedburner feed!

I am all about this except for the cucumbers. I don't know what it is but I am so not a fan of cucumbers. And what is this Wacky Mac that you speak of? I am going to have to find it.

This sounds like a great recipe. My Mom loves cold salads and I am snagging a copy for her.
